Lindsay's Gluten-Free Journey
Hi everyone! I'm Lindsay, the creator of gfree it : a gluten-free lifestyle with Lindsay. As a self-proclaimed cupcake and baked goods connoisseur, being diagnosed with Celiac disease 8 years ago, was a big challenge. After giving birth to my second child, breastfeeding him would cause me to feel extremely sick. We’re talking both ends type of sick. I would eat high calorie and high fat foods, but I was still losing weight rapidly. My energy was gone and I became extremely anemic. It took appointments with my general practitioner, a hematologist, and a GI doctor to discover that I might have Celiac Disease. After a proper upper endoscopy and biopsy of my small intestine, it was confirmed.
Please know that I’m not sharing my story to scare people! I share my story because I want to help others that are on this same journey. Despite the Celiac diagnosis, I was determined to find a way to make cooking gluten free work without sacrificing taste.

# What is Gluten-Free?
Gluten is a protein found in wheat, barley, and rye. It's what gives bread its chewy texture and helps it rise. However, for those with celiac disease or a gluten intolerance, consuming gluten can trigger an immune reaction that damages the small intestine.
This can lead to a range of symptoms, including bloating, diarrhea, abdominal pain, fatigue, and weight loss. Long-term, the damage to the small intestine can lead to other health issues, including anemia, osteoporosis, and even cancer.
