Easy gluten free Cashew Brittle in the microwave!
Instead of giving gluten free Christmas cookies this year, I'm giving gluten free cashew brittle! Okay, so it's already naturally gluten free:). It's a great last minute holiday gift that comes together fast in the microwave. Here is the recipe!
Cashew brittle
1 1/2 c cashews
1 c sugar
1/2 c corn syrup
1 T butter
1 tsp vanilla
1 tsp baking soda
Grease baking sheet. In glass bowl, I use Pyrex, combine nuts, sugar, and corn syrup. Microwave 6 mins. 25 sec on high.
Mixture should be bubbly and nuts browned
Stir in butter and vanilla, put back in microwave for 2 mins 15 sec.
Quickly stir in baking soda just until foamy. Pour immediately onto baking sheet. Cool 15 mins. Break into pieces!
