Gfree it Cranberry Apple Casserole
I don't know about you, but I'm not a huge fan of cranberry sauce, especially if it's out of can. Yikes! Try my gluten free cranberry apple casserole as an alternative to the traditional cranberry sauce by substituting gluten free @Quaker oats. Use it as a side dish, dessert, or even for breakfast! Yup, I have had it for breakfast. Happy Thanksgiving!
Cranberry Apple Casserole
Filling:
2 c fresh or frozen cranberries
3 c chopped apples (Fuji or green apple)
1/3 c of OJ
3/4 c of refined sugar
Fold cranberries into apples. Pour sugar over fruit gently mix together. Add in OJ a little bit at a time until mixed in.
Crust:
1 1/2 c of gluten free oats (Quaker gf 1 min oat)
1/2 c brown sugar
1/2 c melted butter (1 stick)
Pour oats into 1 1/2 quart casserole dish. Add in brown sugar. Mix together with hands. Then add in melted butter. Start to mix with rubber spatula then use hands to form a crust shape on the bottom and up the sides.
Add filling back in making sure to get all the OJ sugary syrup out of the bowl.
Bake at 350 F, with lid on for 25 mins, and then 5 more mins with lid off
Make ahead 1 day or overnight. Enjoy!
